Healthy Banana Bread, Dairy Free, Low Cal

When i’m not working on my music, filming tv on the grind. I like to enjoy lifes little treats without the guilt! There’s nothing worse than feeling like you can’t eat anything when you are embarking on a health journey. I am a firm believer in “a realistic approach to fitness” without sacrificing flavor. That is my specialty! I have mastered how to make low calorie versions of just about every cheat meal you can think of. Depriving yourself is a recipe for disaster. You just have to be willing to learn and implement a few adjustments to your favorite foods.

For this recipe, I have substituted some high fat ingredients with low calorie alternatives that won’t lack flavor when baked.

INGREDIENTS

2 eggs

3 ripe bananas (I used 12 little ones from our tree)

1 tbsp cinnamon

1 tsp baking powder

4 tbsp honey

1 cup of oat powder & 1 cup AP organic flour – If you don’t have oat flour, make your own by adding 1 cup of rolled oats to a blender and blend until it becomes a fine powder.

1/4 cup of melted vegan butter (I used Miyoko’s vegan butter)

HOW TO PREPARE

Peel and mash your bananas. Add wet ingredients in – eggs, honey, and melted butter. Stir until texture is similar to baby food. In a separate bowl add dry ingredients – organic AP flour, oat flour/powder, cinnamon, baking powder and mix. Combine both wet and dry ingredients in one bowl and stir until texture is similar to baby food. Coat or spray a baking pan with olive oil, or use parchment paper, then add the mix. Bake in a oven for 35-45 minutes (up to 55 minutes) over 350 degrees. When done, let it sit on your counter until it has cooled down to a warm temperature. Serve and enjoy. Buen provecho!
