Best Gluten-free White Chocolate Macadamia Cookies

I’m back with a healthy twist to a delicious delight. Nothing feels better than warm cookies on a rainy day. Not that we need a rainy day as an excuse to eat cookies right? California weather has been unpredictable. While today was supposed to be a sunny day, we were welcomed with an endless day of oceanfront rain. No need to worry though. We have cookies to make the rainy day blues better! Soft baked, crispy edges, low on the glycemic index, and gluten-free. These babies are bursting with flavor and are high in protein. We have 4 fully matured macadamia nut trees that are BLOOMING this year, giving us thousands of nuts. Macadamia nut bags will be available in our pure foods store opening soon! We will offer a variety of options; in shell, roasted, raw, salted or unsalted.

Let’s get to the recipe! This batch makes approximately 3 dozen cookies (cut the ingredients in 1/2 for a smaller family size)

INGREDIENTS

  • Butter 1/2 cup (melted – not boiling hot)
  • Organic brown coconut sugar 1/2 cup (click for the brand I use) – important to note: you may use brown sugar as an alternative. However, using coconut sugar keeps the glycemic index LOW. Brown sugar is higher than coconut sugar.
  • 2 Eggs
  • 3 cups Gluten-free oat flour – important note, if you do not care for this gluten-free option you may use all purpose flour. However, it defeats the purpose of it being a healthier alternative.
  • 1 teaspoon Baking soda
  • 1 cup Macadamia nuts
  • 1 cup White yogurt chocolate chips (using yogurt chips reduces sugar and calorie intake VS white chocolate and it tastes similar)
  • 1/2 tablespoon Salt

HOW TO PREPARE

  1. In a bowl, mix the butter and sugar until it gets creamy. You can mix by hand (takes about 2-3 minutes) or use a mixer
  2. Add in the eggs one by one, mix slowly
  3. Add flour, baking soda and salt
  4. Add macadamia nuts and yogurt chips, mix in
  5. Cover your bowl, put it in the fridge for 45 minutes up to an hour (no less)
  6. Remove from the fridge, make little balls depending on the cookie size you desire
  7. Place them on a cooking tray 2 inches apart (I cover my tray with parchment paper to avoid adding oils)
  8. You may flatten them if you want a rounder shape (not necessary)

ROASTING MACADAMIA NUTS **OPTIONAL**

I love roasting my macadamia nuts. If you like roasted nuts, add this to your recipe. While the cookie dough is in the fridge, add your nuts to the over. Let them roast for about 10 minutes or until desired browning. Remove the,, let them cool until it’s time to add them to the dough.

BAKING TIME

  1. Preheat oven at 350
  2. Add the trays in the oven, let the cookies cook for 15 minutes OR longer (up to 25 minutes in a lower heat 325) – important note, the longer the cookies bake the crispier the edges get, don’t over bake so the cookies are not hard. Play with the temperature and time.

STORAGE

  1. Keep them in a air tight container on your counter
  2. Or freeze them for 2 months
